It's not likely that either Gretel or Hans will need to be absolutely the fastest or toughest thing on the planet. So they compromised: good at what they are built to do, but humanoid enough that they can interact with humans without their form factor being disquieting.
... Why they chose to make her a cyclops with a glow-in-the-dark face after making that decision, well, it just shows that they're not human parents and don't think in quite the same way.
